Sweet Corn Curry Chowder

This is hands down one of our favorite soups. It’s got major fall feels. Can a soup be cozy? Is that a thing?

Back story… We sampled a similar soup while visiting Oregon back in November. We were at a charming little cafe in downtown Hood River and had a scrumptious creamy mushroom bisque and raved about it to the staff. They were kind enough to let us try a homemade Corn Chowder they were cooking up. We couldn’t stop thinking about how yummy it was after we left and couldn’t wait to recreate our own. This recipe will always remind of us that trip. This soup is both delicious AND nostalgic in the land of Boehmke.

We had one cool(er) day recently and made a big batch. It was absolute perfection. The sweet corn adds such a nice crunch to each bite. Drooling!

We sent some over to our neighbors and 18 month old Goldie loved it! It’s Goldie Approved and that’s pretty much all you need to know! Ok, let’s get down to business!

Here’s what you’ll need:

- 3 to 5 cloves garlic

- 1 large yellow onion

- 3 lbs baby gold potatoes

- 3 cans sweet corn

- 2 cans lite coconut milk

- 1/2 c pure maple syrup

- 2 tsp oriental curry powder

- 1 tsp himalayan pink salt

In The Kitchen:

- medium sauté pan
- blender


Crush and mince garlic cloves, chop onion and cut potatoes into small 1/2 inch cubes. Set aside.

Put a medium depth sauté pan on the stove and bring to medium/high heat. Add 2 tbsp of water, garlic, and onion. Cook until onions become translucent (5-7mins) adding 1 tbsp water as needed to keep from sticking. 

Turn heat down to medium, add potatoes and stir to combine. Cover and cook for 10 minutes stirring occasionally to prevent sticking. Add 1-2 tbsp of water to keep from sticking as needed. 

Uncover and stir in corn, maple syrup, coconut milk, and curry powder. Turn heat to high and bring to boil.

Turn to low, cover, and simmer for 15 minutes, stirring occasionally. 

Remove from heat. Add about 1/4 of the mixture to a high speed blender with Himalayan pink salt and purée until smooth. 

Add purée back into the soup and stir until combined! Serve warm.

Pairs well with grilled cheese (if you’re into that sorta thing)!
